winemaking notes
The fruit came in from the La Feuille d'Or Vineyard (Golden Mile sub GI) on September 20th. The fruit looked nice and had good flavour balance. Destemmed and hand sorted into a 1200 liter open top oak fermentor. Fermentation started spontaneously on September 24th. Mild punch downs once daily until the proper extraction was achieved and after that just a daily wetting of the cap. Pressed on October 15th to a stainless steel tank. Free run and press wine kept separate. Racked into a 2017 300 liter French oak barrel to add some depth and character to the wine and to allow for better overall integration. About 25 % natural Le Vieux Pin Vineyard (Black Sage Bench) Syrah was added to the final blend to help balance the acid and overall structure of the wine. Racked twice before bottling on March 2nd, 2022.
This year's style is very clean, fruit-forward, and well balanced with some fine oak tannins. Ready to drink and enjoy now
