The fruit came in from the Le Feuille D'Or vineyard (Golden Mile sub GI) on August 25, 2021 and looked very clean and tasted fresh and bright. Destemmed and hand sorted into a stainless steel tank on skins. Fermentation started spontaneously on August 31st. Mild punch downs once daily till the desired extraction was achieved. The last few days before pressing the cap was gently wet to control the extraction and bitterness. Pressed off skins on September 6th to a stainless steel tank. Went through Malolactic Fermentation and finished alcohol fermentation with residual sugar around 1.3 g/L and a PH of 3.5. Racked into a 500 L Neutral French Oak Puncheon for a short time to allow the wine to integrate better and batonnaged often to allow for the lees to add texture, aromatics and elegance. Racked twice before bottling on March 2nd, 2022.
The style this year is very aromatic with a dryer more complex palate than the previous year.
