WINEMAKER'S NOTES
Black fruit, cigar and cocoa. A dense complex palate, dominated by plums and spice. Age worthy tannins give the wine backbone and structure reminiscent of a claret. Massive, mercurial finish of plums and cocoa, this finish is in constant flux right to the end. We recomend decanting this wine before serving.

Rack of lamb is classic, braised bison shortribs, or a rare porterhouse.
